The reason Koreans particularly love flat dumplings lies not in extravagant fillings, but in the aesthetics of texture and harmony. With only a minimal filling of glass noodles and chives, they might seem sparse at first, but when pan-fried in oil, the unique crispiness and chewiness of the wrapper truly shine. Their true value is revealed when paired with intensely flavored dishes like Tteokbokki sauce or spicy and tangy Jjolmyeon, as they gently envelop and neutralize the heat. The umami that comes to life when these plain dumplings are topped with a savory soy sauce dip—generously packed with chopped green onions and chili flakes—is the signature charm of flat dumplings.

Originating in Daegu, this dish evokes warm memories of eating it alongside Tteokbokki with friends on our way home from school or in bustling market alleys. At first glance, they might seem no different from regular veggie dumplings. However, the reason they aren’t treated as just another dumpling is because they hold a special place in our memories as a fond ‘taste of nostalgia’—the kind that immediately makes us say, “Oh! It’s flat dumplings, we used to eat these so much…” While I can’t recreate them perfectly, I make and enjoy them using a simple method, just enough to bring back those memories.

I used store-bought dumpling wrappers for this recipe. The key to flat dumplings is an incredibly thin wrapper, which is difficult to make from scratch, so store-bought ones are a great alternative. I used one bunch of sweet potato noodles, and it was just the right amount—leaving only a tiny bit of filling left over after using up a whole pack of wrappers. For the garlic chives, a small amount—about the size of a coin when gathered with your fingers—is plenty. Above all, the most important rule for flat dumplings is to keep the filling to a minimum.

First, let’s boil the glass noodles. Pour 2 liters of water into a pot and bring it to a rolling boil. It is crucial to add the noodles only when the water is boiling. If you put the hard noodles in cold water right from the start to soak them, they won’t fit well in the pot, and they might stick to the bottom or become too mushy while the water heats up.
Once the water is boiling, put the noodles in and hold the top ends for a moment. As the bottom softens, they will naturally slide right into the pot. Once the noodles are fully submerged, boil them thoroughly for 10 minutes, stirring occasionally to prevent them from sticking.

After boiling for about 10 minutes, the glass noodles will become clear and transparent. If there is no hard core when you bite into a strand, they are perfectly cooked. Please don’t take them out early just because you don’t want them to get mushy. The noodles for the dumpling filling actually need to be very soft to make shaping the dumplings easier. Ten minutes is plenty of time. Pour the cooked noodles into a strainer, rinse them in cold water, and let them sit for about 15 minutes to drain completely.

While the glass noodles are draining, chop the garlic chives. Place the finely chopped chives into a large bowl. Roughly cut the drained noodles with scissors, then place them in a food processor (or vegetable chopper) to mince them finely.

Add the finely chopped noodles to the bowl with the chives, then season with 1 Tbsp of soy sauce, 1/2 tsp of black pepper, and 1/4 tsp of salt.

After adding the seasoning, gently toss everything together so the chives don’t get crushed and mix evenly with the noodles. It’s perfectly fine if the filling isn’t fully seasoned at this stage. It has just the right amount of flavor to be enjoyed later when dipped in the soy sauce or other condiments.

Now it’s time to fill the dumpling wrappers. Instead of using the store-bought wrappers exactly as they are, I used a rolling pin to roll them out even thinner and wider, making them closer to authentic flat dumplings.

By doing this, the green chives gently peek through the thinned wrappers, which looks quite lovely. Whether you pan-fry them or deep-fry them like I did today, the vibrant green filling remains slightly translucent, making the dumplings look even more appetizing.

Now, let’s fill the dumplings. Place an appropriate amount of filling in the center of the thinly rolled wrapper, fold it into a half-moon shape, and align the edges. If you lightly dab a little water along the inner edges, they will seal perfectly without coming apart.

Firmly press the joined edges with your fingers to seal them completely. Then, gently press down on the plump center so the filling spreads evenly to both sides. Because they are shaped flat like this, they are called ‘Napjak-mandu’ (flat dumplings). Thanks to my daughter helping me by my side, shaping them was so much easier.

You can pan-fry the shaped dumplings in a regular pan. While that would make them closer to the familiar flat dumplings we know, today I’m going to deep-fry them in a generous amount of oil. I actually prefer deep-frying over pan-frying because I can make a large batch to store in the freezer. When you’re ready to eat, simply popping them in the air fryer for about 5 minutes makes them just as crispy as freshly fried ones.

First, pour oil into a pot, set the heat to medium, and wait for the temperature to rise slowly. Since the dumpling wrappers are so thin, frying them over high heat will burn them quickly and make them too dark. If that happens, they won’t look very appetizing when you reheat them in the air fryer later.

Fry them over medium heat until they turn a nice golden brown. Once they reach the right color, use a strainer to scoop them out quickly all at once. If you try to take them out one by one, the remaining dumplings in the oil will continue to fry and turn too dark.

The photo below shows the frozen dumplings after being reheated in the air fryer. As you can see, they still have the same beautiful color as when they were freshly fried.

After enjoying them with my family, I stored the leftover dumplings in a ziplock bag in the freezer, along with some homemade Gimmari (fried seaweed rolls). I’ll leave a link below for the Gimmari recipe, as it’s the absolute perfect pairing for these flat dumplings.

Now it’s time to make the dipping sauce to serve with the dumplings. The recipe is incredibly simple!

First, finely chop 4 stalks of green onions. Then, in a bowl, combine 1/4 cup of soy sauce, 1/3 cup of water, 1 tsp of minced garlic, 1 Tbsp of Korean chili flakes, 1 Tbsp of sesame oil, and 1 Tbsp of sesame seeds, and mix everything well.

If you chop and add some spicy peppers to this, it becomes a versatile, all-purpose sauce that’s great for dipping fish cakes or pairing with acorn jelly (Dotori-muk).
People often add sugar to reduce the saltiness of a dipping sauce, but adding sugar to soy sauce can actually make the salty flavor stand out even more. That’s why I prefer to add plenty of water instead of sugar. The water naturally mellows out the saltiness and beautifully softens the sharp edge of the soy sauce, resulting in a much better, well-rounded flavor.

Today, I enjoyed spending quality time with my family while making these simple dumplings. We laughed so much as we shared my nostalgic memories of flat dumplings, along with fun stories from my husband and children. Because of that, it felt like much more than just a meal—it was a heartwarming time spent sharing our precious memories together.
