
예전에는 잼(Jam)을 만들다 보면 항상 기대보다는 걱정이 먼저 앞서곤 했습니다. 시판용 잼(Store-bought jam)을 사서 먹을때는 이런 마음들이 덜 한데, 내가 직접 잼을 만들어 먹을 때 드는 마음입니다. 이렇게 많은 설탕(Sugar)이 들어가는 것을 먹어도 되나? 생각들 때가 있었습니다. 당연히 시판용 잼(Store-bought Jam)에도 많은 설탕이 들어갔겠지만 눈에 안보이니 괜찮았습니다. 그럼에도 걱정스럽게 드는 생각은 잼(Jam)을 만드는데 왜 이렇게 설탕(Sugar)이 많이 들어가는지? 나의 이해를 돕는 정도로 알아보았습니다. In the past, whenever I made jam, worry always preceded anticipation. I felt less this way when buying store-bought jam, but this was how I felt when making and eating it myself. There were times I thought, “Is it really okay to eat something with this much sugar?” Of course, store-bought jam must have contained a lot of sugar too, but because I couldn’t see it with my own eyes, it felt fine. Still, I couldn’t help but wonder: why does making jam require so much sugar? So, I looked into it to help me understand better.
먼저, 딸기잼(Strawberry Jam)을 만들려면 꼭 넣어야 할 세 가지가 있습니다.
First, there are three essential ingredients you need to make strawberry jam.
첫 번째, 딸기(Strawberry) 입니다.
The first is strawberry.

딸기는 수분이 많고 조직이 부드러워 쉽게 물러지고 곰팡이(Mold)가 잘 생깁니다. 하지만 설탕과 함께 끓이면 설탕이 미생물(Microorganism)이 이용할 수 있는 수분을 잡아두어 곰팡이(Mold)의 생육(Growth)을 막아준다고 합니다.
Strawberries have high moisture content and a soft structure, so they easily spoil and grow mold quickly. However, when boiled with sugar, the sugar binds the moisture that microorganisms would otherwise use, preventing the growth of mold.
두 번째, 설탕(Sugar)입니다.
The second is sugar.

설탕은 딸기(Strawberry)의 신맛을 부드럽게 감싸주고, 딸기의 향과 단맛의 균형을 잡아 줍니다. 너무 많은 설탕이 들어가는 것이 싫다고 설탕을 줄이면 보존력이 떨어져 금방 곰팡이(Mold)가 생기게 됩니다. 즉, 설탕은 생 딸기(Fresh strawberry)를 오랫동안 안전하게 보관하기 위해 반드시 넣어야 하는 보존제(Preservative) 입니다.
Sugar gently softens the sourness of strawberries and balances their aroma and sweetness. If you reduce the amount of sugar because you dislike using too much, the shelf life decreases, and mold will quickly form. In other words, sugar is an essential preservative required to store fresh strawberries safely for a long time.
세 번째, 레몬(Lemon)입니다.
The third is lemon.

마지막에 넣는 레몬즙(Lemon juice) 역시 단순한 신맛이나 보존 목적이 아닙니다. 딸기에 부족한 산(Acid)을 보충하여 펙틴(Pectin)이 젤을 형성하기 가장 좋은 환경을 만들어 주고, 자극적인 단맛을 잡아주어 딸기본연의 풍미를 더 선명하게 살려주는 역할을 합니다.
The lemon juice added at the end is also not simply for a sour taste or preservation. It supplements the acid that strawberries lack, creating the best environment for pectin to form a gel, and balances the intense sweetness to bring out the strawberry’s natural flavor more vividly.
그럼, 이 세가지로 어떻게 잼이 되는 걸까요?
Then, how do these three ingredients turn into jam?
잼(Jam)의 특유의 말랑하고 걸쭉한 형태가 되려면 펙틴(Pectin), 산(Acid), 설탕(Sugar)이라는 세 가지 조건이 꼭 갖춰져야 합니다.
To achieve the soft and thick texture characteristic of jam, three conditions must be met: pectin, acid, and sugar.
펙틴(Pectin)은 과일 속 천연 성분으로, 적절한 설탕과 산도가 더해질 때 비로소 펙틴끼리 서로 연결되어 젤(Gel)처럼 단단하게 엉키게 됩니다.
Pectin is a natural substance in fruit. Only when the right amount of sugar and acidity are added do the pectin molecules bind together to form a firm, gel-like network.
펙틴(Pectin)은 딸기 안에 실제로 들어 있는 천연 성분이지만 그 양이 아주 많지는 않기 때문에, 잼(Jam)을 만들 때 적절한 비율의 설탕(Sugar)과 레몬즙(Lemon juice)을 더해 딸기속 펙틴(Pectin)이 최대한 단단하게 결합(Gel)하도록 만드는 것입니다.
Although pectin is naturally present in strawberries, the amount is quite small. Therefore, when making jam, adding sugar and lemon juice in the proper proportions helps the pectin inside the strawberries gel as firmly as possible.



여기서 한 가지 중요한 점은, 잼(Jam)을 만들 때 적당히 끓여야지, 묽은 느낌이 싫고, 걸죽한 느낌이 좋다고 잼을 너무 오래 끓이면 오히려 펙틴(Pectin)이 손상되어 원하는 질감이 나오지 않을 수 있습니다. 게다가 딸기의 예쁜 붉은 색소인 안토시아닌(Anthocyanin)은 열에 아주 약해서, 과도하게 가열되면 색이 칙칙해지고 설탕(Sugar)이 타면서 캐러멜(Caramel)같은 쓴맛이 날 수 있어 적당한 시간 동안 조리는 것이 무엇보다 중요합니다.
One important point here is that when making jam, you need to simmer it for just the right amount of time. If you cook it for too long simply because you dislike a watery texture and prefer a thicker consistency, the pectin can become damaged, preventing you from achieving the desired texture. Furthermore, anthocyanin, the vibrant red pigment in strawberries, is very sensitive to heat. Excessive heating can cause the color to dull and the sugar to burn, imparting a bitter, caramel-like flavor, so simmering for the proper amount of time is crucial.
설탕을 넣어야 하는 이유 들을 참고해서 딸기 잼(Strawberry Jam)을 만들어 보았습니다. 딸기는, 냉동 딸기(Frozen strawberry)를 사용했고, 그리고 저는 딸기를 뭉개서 잼을 만들지 않습니다. 딸기의 알갱이가 씹히는 것을 좋아 합니다. 그래서 냉동딸기(Frozen strawberry)를 이용해서 잼을 만들 때는, 딸기와 설탕을 녹이는 시간 없이 바로 끓이는데, 처음에는 조금 저어줘야 합니다. 물이생길때 까지….
Keeping the reasons for adding sugar in mind, I made strawberry jam. I used frozen strawberries, and I don’t mash the berries when making jam because I like having chunks of fruit to chew on. So, when making jam with frozen strawberries, I bring them to a boil right away without taking time to thaw or melt the strawberries and sugar together—though you need to stir a little at first until liquid starts to form.
[재료 / Ingredients]
Frozen Strawberries (냉동 딸기): 1.2kg (600g × 2)
Sugar (설탕): 500g
Lemon Juice (레몬즙): 2 Tbsp
만들기;——->냉동 딸기 600g x 2 봉지를 녹이는 단계 없이 큰 냄비에 붓고——-> 설탕500g 을 딸기위에 부어서 불을 켭니다.——->설탕이 어느 정도 녹고 딸기에서도 수분이 나올 때까지 잘 저어 줍니다.(이때 저어주지 않으면 바닥의 설탕이 탈수 있습니다.)
Instructions:
——-> Pour two 600g bags of frozen strawberries directly into a large pot without thawing.——-> Add 500g of sugar over the strawberries and turn on the heat.——-> Stir well until the sugar dissolves slightly and juice begins to release from the strawberries. (If you don’t stir at this point, the sugar at the bottom may burn.)
——->딸기와 설탕이 끓기 시작하면서 생기는 불순물을 살짝 건져줍니다.——->딸기가 본격적으로 끓기 시작해서 부터 15분 끓여주면 되는데 거의 끓었을 때——-> 레몬 즙 2 Tbsp를 넣어서 나머지 시간까지 끓여 줍니다. (물론 잼이 완성될 때까지 수시로 저어 줘야 합니다.)———> 15분 지난 후 차갑게 식혀도 되고 뜨거운 상태에서 살균 된 병에 담으시면 됩니다. 뜨거울 때 담을 경우 조심해야 합니다. 젤 형태가 된 딸기와 설탕은 엄청 뜨겁습니다.
——-> Gently skim off any foam or impurities that rise to the surface as the strawberries and sugar begin to boil. ——-> Once the mixture reaches a full boil, let it cook for 15 minutes; when it is almost done, ——-> add 2 Tbsp of lemon juice and cook for the remaining time. (Be sure to stir frequently until the jam is finished.) ———> After 15 minutes, you can either let it cool completely or pour it while hot into sterilized jars. Please be very careful if bottling while hot—the gelled strawberry and sugar mixture is extremely hot.








이렇게, 설탕(Sugar)이 들어가는 이유 들을 알게 되면서 걱정스러운 마음을 내려놓기로 했습니다. 딸기(Strawberry)의 상큼한 향과 달콤함을 설탕이 많이 들어간다는 이유로 외면할 수는 없기 때문입니다.
In this way, as I came to understand the reasons why sugar is added, I decided to let go of my worries. This is because I couldn’t turn away from the fresh aroma and sweetness of strawberries just because a lot of sugar goes into it.
“딸기잼(Strawberry Jam)을 만들려면 설탕(Sugar)이 반드시 들어가야 한다” 는 원리와 원칙을 되새기며 걱정하지 않고 만들고 있습니다.
Reminding myself of the principle that “Sugar is an absolute essential when making strawberry jam,” I now make it without any worry.
