On Sunday morning before heading to church, I made crepes for a quick breakfast. Having lived here for a while now, it seems my morning routine has become much simpler and lighter. When I was very young, though I couldn’t say why at the time, I used to say quite often that I wanted to live in a country where people ate bread. As a child, I had a sensitive stomach and was particularly repelled by strong odors and unfamiliar foods, making mealtime the hardest part of my day. Perhaps that was why I wished to live in a land where bread was the staple. And now, here I am, living in a country where bread is indeed the daily bread. Coincidence, perhaps….
When it comes to bread with such rich variety, beautiful presentation, and wonderful taste, nothing compares to what you find in Korea. Although Paris Baguette stores have opened in major Canadian cities, their selection is somewhat different from what is available back home. It feels as though one cannot fully experience the authentic taste of Korean bakeries here.
Whenever I visit Korea, I wish I could just eat bread to my heart’s content, but my family never lets me. They say, ‘You haven’t visited in so long, why waste a meal on bread?’ and insist on having Korean food over and over. In the end, with no room left in my stomach for bread, I’ve had to return home empty-handed. Here, far away from all those delicious bakeries, we live while gradually forgetting that taste—or perhaps, we deliberately set the memory aside, knowing how much we would crave it if we remembered. So on days like today, I make something sweet and simple for myself, tossing in some healthy avocado just in case it might feel a bit too sweet.

Before making the crepes, the pan I used is specifically designed for crepes, and it’s quite affordable. However, one downside is that it doesn’t have temperature control, which makes me feel a bit rushed whenever I make them.
Since the batter cooks so thin, it becomes a race against time. So, I looked into why that is.
The optimal temperature for cooking crepes is usually around 180°C to 200°C (350°F–400°F). It is said that once the pan reaches this temperature, the internal heating element automatically cycles on and off to maintain a constant heat.
Crepes are cooked very quickly—taking only about 30 seconds to a minute over high heat. If you lower the temperature and cook them slowly, the moisture evaporates, leaving them crisp or tough. That is why these pans are generally designed to hold a steady high heat
And so, they cook beautifully—albeit at a very busy pace! Still, even after cooling down, they retain a delightfully chewy texture. My husband actually prefers the texture of crepes over pancakes.
I tried using a regular pan once, but the crepes didn’t turn out as thin and ended up feeling more like thick Korean wheat pancakes (miljeon). So even if things feel a bit rushed, I stick with the dedicated crepe pan.

When making crepe batter, I use a blender. One thing to keep in mind is that while using a blender is quick and convenient, the heat generated by friction can cause the temperature of the batter to rise. Higher temperatures accelerate gluten development, which can result in crepes that aren’t thin, but rather tough or heavy in texture. (If you choose to mix the batter by hand, I highly recommend straining it through a fine-mesh sieve.)
Adding ice cubes at this stage instantly lowers the temperature of the batter and prevents excess gluten formation. As a result, the batter spreads thinly and smoothly across the pan, creating a much softer crepe. This gives you a beautifully smooth batter.
Here is how to make crepes quickly in a race against time before heading to church. First, add 300 ml of milk, 2 eggs, 1 cup of flour, 3 tbsp of melted butter, 1 tbsp + 1/2 tsp of sugar, 1/4 tsp of salt, and finally 60 g of ice cubes (about 4 to 5 cubes if you don’t have a scale) into a blender, then blend.
Pour the blended batter into a bowl specifically meant for the crepe maker. Next, use a paper towel to lightly coat the preheated pan with olive oil. If you use a brush or other utensils, it may leave too much oil, causing the batter to slip, not adhere properly, and fall off. You only need to apply it once at the beginning, though if you’re using an older pan, you can reapply occasionally between batches.

Dip the top of the crepe pan upside down into the batter bowl to coat it. At first, you may notice air bubbles on the crepe like in the photo due to blending the batter, but from the second crepe onward, it turns out fine.

Check the edges of the batter, and once they are cooked and release easily, flip it over using a utensil or your hands. Always be careful, as it can be very hot.

Once the flipped side is cooked, turn the pan upside down over a prepared sieve or plate, and the crepe will slide off easily. It turned out that I had made 18 crepes in total.

Continue making the crepes using the same method. Towards the end, the remaining batter may thicken slightly, so you can add a tiny splash of cold water before cooking. If the batter gets too thick, it becomes heavy and fails to stick to the pan properly, sliding right off. Regardless of how you mix your batter, the last portion naturally tends to thicken up, so it’s good to keep this tip in mind.
Once the crepes are done, simply fold them to your liking and top with whatever you enjoy. I topped mine with some homemade strawberry jam.
