When you visit the pork section at Costco, you will find a large cut of meat called ‘Boneless Pork Shoulder Blade Roast.’ It is a deboned shoulder cut that offers a very generous amount for the price. Since it includes the collar section, I use the fattier parts to make Jeyuk Bokkeum (spicy pork stir-fry), and the remaining lean meat for Kimchi Jjigae or various other meat dishes.

Unlike in Korea, where you can buy the exact amount of specific cuts you need, here you have to buy meat in large chunks to enjoy it at a reasonable price. It is not that smaller packages aren’t available, but they are honestly a bit lacking when you want to eat to your heart’s content.

Still, since I can get these large cuts of meat at Costco affordably, I make sure to pick one up whenever I go. Then, on days when I can’t think of what to cook, I often whip up some Jeyuk Bokkeum.

재료 (Ingredients):

500g (Pork 500g)

(1/2 Onion)

(8 Bok Choy)

(5 Medium Green Onions)

(Seasoning Ingredients):

3Tbsp (Gochugaru / Korean Chili Flakes 3Tbsp)

간장 4Tbsp (Soy Sauce 4Tbsp)

2Tbsp (Minced Garlic 2Tbsp)

3Tbsp (Gochujang / Korean Chili Paste 3Tbsp)

2Tbsp (Sugar 2Tbsp)

후추 1Tsp (Black Pepper 1Tsp)

3Tbsp (White Wine 3Tbsp)

Prepare 500g of pork by slicing it into moderately thin and wide pieces. Since it is not a fatty cut like pork belly, slicing it too thick can make the meat tough or dry, so it is best to slice it thinly to allow the marinade to absorb well. Also, keep in mind that the meat will shrink as it cooks, so be sure to cut the pieces wide to account for this.

Wash the bok choy thoroughly, ensuring the insides of the leaf bases are clean, and use a salad spinner to remove the moisture completely. I like to make my Jeyuk Bokkeum with a bit of broth using only the natural moisture from the vegetables without adding any extra water, which is perfect for mixing with rice and keeps the meat moist until the very end. Since bok choy naturally holds a lot of water, leaving any washing water on it can make the dish too watery, so it is best to make sure it is completely drained beforehand.

Slice half an onion and 5 medium green onions into bite-sized pieces. When I stir-fry with bok choy, I prefer not to add too many other vegetables. In particular, I skip carrots in Jeyuk Bokkeum because of their distinct flavor. While carrots are often added for a pop of color, I rely on the bok choy for a vibrant green and the gochugaru (Korean chili flakes) for a rich red. This way, the dish looks beautifully balanced without any single ingredient overpowering the rest visually.

Now it is time to mix the seasoning. The amount of Jeyuk Bokkeum we are making today is more than enough for a family of four. We will not be using a separate mixing bowl; instead, we will season the meat directly in the pan we will be cooking in, so make sure to use a spacious stir-fry pan. Place the sliced meat into a deep and wide pan, and add 3 Tbsp of white wine, 1 Tsp of black pepper, 4 Tbsp of soy sauce, 3 Tbsp of gochugaru (Korean chili flakes), 2 Tbsp of minced garlic, 3 Tbsp of gochujang (Korean chili paste), and 2 Tbsp of sugar. Mix everything thoroughly so the meat is evenly coated with the marinade.

The flavor of the gochujang is also crucial for Jeyuk Bokkeum. If the proportion of fermented soybean powder is higher than the chili flakes, the color of the marinade can turn muddy, and the taste can easily become heavy or chalky. When that happens, you can adjust the flavor by reducing the amount of gochujang and adding more chili flakes and soy sauce. The photo shows the gochujang I use. Although the exact ingredient ratios aren’t listed, I use it because it doesn’t leave any muddy or heavy taste when I cook with it.

Add the vegetables to the seasoned meat and mix them lightly. There is no need to force the marinade to coat all the vegetables; simply toss them gently so the meat and vegetables are well combined.

As I was writing this, I realized there is another name for Jeyuk Bokkeum. I remembered that when I was young, adults and many other people used to call it ‘Jumulleok,’ so I decided to look into it.

The word ‘Jeyuk’ in Jeyuk Bokkeum is said to originate from the Sino-Korean word ‘Jeoyuk’ (豬肉). Using the characters for pig (豬, Jeo) and meat (肉, Yuk), it originally meant pork. Over time, the pronunciation naturally shifted to ‘Jeyuk’ to make it easier to say, so Jeyuk Bokkeum literally means ‘stir-fried pork.’ Jeyuk Bokkeum and Jumulleok differ slightly in their cooking methods and how the marinade is absorbed.

Jeyuk Bokkeum is a name focused on the ingredients and the cooking method (pork + stir-fry). It is typically prepared by marinating the meat in a gochujang (Korean chili paste) or gochugaru (Korean chili flakes) based sauce in advance to allow the flavors to penetrate deeply, and then stir-frying it with vegetables.

The name ‘Jumulleok’ comes from the action of mixing meat with seasoning by hand (‘jumulleok-georida’, meaning to massage or knead). Its characteristic is that the meat is not marinated for a long time; instead, the seasoning is added right before cooking, and the meat is firmly massaged by hand to quickly infuse the flavor and tenderize it.

While Jeyuk Bokkeum and Jumulleok are similar in that they both involve cooking seasoned meat, they are called by different names depending on the marinating time and whether the meat is strongly massaged by hand right before cooking. I feel like my cooking method falls somewhere between Jumulleok and Jeyuk Bokkeum. I still mix it gently by hand, but the marinating time varies each time, and since they are both ultimately stir-fried dishes, I sometimes wonder if it is even necessary to distinguish them with two different names.

This is how I stir-fry my Jeyuk. Before placing the pan with the meat and vegetables on the heat, I first drizzle 2 Tbsp of oil. This is because the gochujang-based marinade can easily burn from the heat before the vegetables release their moisture. Set the heat slightly lower than medium, and make sure to cover the pan with a lid while stir-frying. Since the seasoning makes it hard to tell if the meat is fully cooked or not, keeping the lid on ensures it cooks thoroughly and evenly all the way through.

Open the lid occasionally and give everything a good stir to prevent the seasoning at the bottom from burning, continuing until the vegetables and meat release their juices.

Now comes the crucial part. Once the vegetables and meat release their juices and form a little broth at the bottom, remove the lid and stir-fry the meat over high heat. Cooking with the lid on over lower heat initially was to ensure the meat cooked evenly all the way through and to draw out moisture so the seasoning wouldn’t burn. From this point on, you must finish it quickly over high heat to prevent more liquid from forming and to keep the vegetables from wilting too much.

The cooking process might seem a bit tricky, but if you follow the steps one by one, it is not too difficult.

The key is to stir the meat initially so the marinade doesn’t burn, cover it with a lid to cook it thoroughly, and once a little broth forms, stir-fry it quickly over high heat. Adjusting the heat while cooking can be a bit of a hassle, but thanks to this process, the meat stays moist and absorbs the seasoning without drying out, while the crisp texture of the bok choy is perfectly preserved. Knowing the happiness of seeing my family enjoy the Jeyuk Bokkeum I made with such care, I continue to prepare beautiful and delicious food with a delicate heart today.
