I went to Superstore. I was glad to spot Daikon radishes and wanted to buy one, but they only had excessively large ones available. I had no choice but to bring home a massive one, about the size of two Korean radishes combined. Since it would be difficult to store as is, I quickly made Kkakdugi.
Unlike Korean radishes, Daikon has no green parts and is completely white from top to bottom. It lacks firmness inside and gets mushy easily, but since it is so hard to find Korean radishes—which only occasionally appear at Chinese markets—I am always happy to find and use Daikon. Thanks to this, I whipped up some Kkakdugi in a flash.

The biggest characteristic of this Daikon radish is that it has almost no flavor. It lacks the sweet or refreshing taste typical of radishes, and its actual taste is closer to an earthy flavor. That is why I do not use sugar when making Kkakdugi with this radish. When initially salting the radish, I add a sugar substitute like Splenda along with salt to infuse sweetness into the otherwise tasteless radish.

Since Daikon radishes do not firm up even when salted, using sugar causes its sticky sweetness to cling to the dehydrated radish, preventing it from having a refreshing taste. On the other hand, a sugar substitute like Splenda does not create stickiness, which seems to compensate for the Daikon radish’s tendency to taste heavy and helps bring out the refreshing flavor of Kkakdugi.
Furthermore, if you add regular sugar to Daikon radishes—which have a soft texture and easily become mushy—it acts as a direct food source for the Kimchi lactic acid bacteria, rapidly accelerating fermentation. This can easily cause the radish to turn mushy. However, because lactic acid bacteria cannot easily break down sugar substitutes, the fermentation speed slows down, ultimately preserving the radish’s texture for much longer. I believe this is the reason why ‘New Sugar’ (saccharin) is used in Korea.
재료 (Ingredients):
1 Daikon radish (Size of 2 Korean radishes)
무 절이기 (For salting the radish): 물 250ml (250ml Water), 소금 2Tbsp (2 Tbsp Salt), 스플렌다 4포 (4 packets Splenda)
1/2 Onion
1/2 Apple
1 thumb-sized piece of ginger
3Tbsp / 3 Tbsp Minced garlic
3Tbsp / 1/3 Cup Gochugaru (Korean chili flakes) + 3 Tbsp extra Gochugaru
4Tbsp / 4 Tbsp Fish sauce
소금 1tsp / 1 tsp Salt
1/4Cup (1/4 Cup Hot water)

Since I made this Kkakdugi on a whim, I didn’t have any ginger to add. However, Kkakdugi tastes much better with ginger, so please make sure to include it. First, peel the radish and cut it into pieces about the size of a finger joint. You can just cut them into easy bite-sized pieces.

Next, salt the radishes. Mix 250ml of water, 2 Tbsp of salt, and 4 packets of Splenda until well dissolved. Pour the mixture over the chopped radishes and let them salt for 1 hour, tossing occasionally to ensure even salting.

After 1 hour, drain the salted radishes in a strainer, discarding the liquid. Let them sit for about 30 minutes to drain completely.

Today, I’ll show you how to make glutinous rice paste in the microwave. It is important to use hot water for this. In a bowl, combine 2 Tbsp of dry sweet rice flour with 1/4 Cup of hot water, and stir well to dissolve any lumps. Microwave for 30 seconds, stir thoroughly one more time, and let it cool.
I sometimes use this trick when I want to save time, as it is very easy. However, it is only suitable for small batches. When making Kimchi, I highly recommend making the effort to cook it in a pot on the stove.

Before making the seasoning, chop 4 stalks of green onion into pieces similar in size to the radish. Next, let’s prepare the seasoning. Place 1/2 of an onion, 1/2 of an apple, and a piece of ginger into a food chopper and blend them. I happened to be out of ginger, so it’s missing from the photo, but please make sure to include it when you make yours!

Before adding the seasoning to the drained radish, put in 3 Tbsp of Gochugaru first and mix evenly. Coating the radish with chili powder beforehand ensures the seasoning clings to it well later.

Now it’s time to make the seasoning. In a bowl, combine the blended apple, onion, and ginger. Add the glutinous rice paste, 1/3 Cup of Gochugaru, 3 Tbsp of minced garlic, 4 Tbsp of fish sauce, and 1 tsp of salt, then mix thoroughly. Sadly, I forgot to take a photo of the mixed seasoning.
Add the seasoning to the radish that was pre-coated with chili powder and mix evenly. Add the green onions at the very end and mix lightly to prevent them from getting crushed. If you feel it lacks sweetness, I suggest adding a bit of Splenda rather than sugar. We found the sweetness from the salted radish to be enough, so we skipped this step.

Leave the finished Kkakdugi at room temperature for one night, then move it to the refrigerator. Kkakdugi is much more delicious when well-fermented rather than freshly made, and it goes incredibly well with various soups or fried rice. I ended up whipping this up quickly because the radish was too massive to store, but I can’t wait for it to perfectly ripen once again.
