Perfect Belgian Waffle:

There was a time when I was terribly sick with a bad cold. Whether my immune system had weakened or I had overworked myself, I was bedridden for days. The medicine brought no relief, so I just had to endure the illness, unable to taste any food at all.

My husband and daughter went out to buy some food for me, and on their way back, they brought a small waffle and placed it by my bedside. It was a warm Starbucks latte and a Belgian waffle. I didn’t have the energy to eat right away, so I left them untouched for a few hours. However, feeling grateful for my family’s thoughtfulness, I barely managed to sit up and take a bite. I don’t remember the taste of the cold latte, but the waffle was so incredibly delicious that I feel like I can still taste that sweetness in my mouth. Due to the medication, everything else tasted bitter, but the sweet, crunchy texture of the waffle was so delightful that I still vividly remember eating two of them in a row.

Whether it’s a mild cold or another illness, being sick is truly difficult for both the person who is ill and the one caring for them. Among all things, the hardest part is eating. The sick person lacks the strength to swallow or the energy to taste food, while the caregiver anxiously tries to find something appetizing and nutritious to feed them.

I can’t express how much comfort those two waffles, which I normally wouldn’t have sought out, brought me at that time. That is why I still love Belgian waffles so much today. People say you should avoid sweet foods as you get older, but thanks to the thoughtfulness of my husband and daughter who bought them for me, and the memory of that incredible sweetness even in the midst of being sick, I simply cannot bring myself to stay away from these waffles.

At first, I used to buy one whenever I had coffee, but the cost was a bit burdensome, so now I make them myself using my own recipe. Just as everyone has a comfort food that holds a special story and meaning, for me, the Belgian waffle is exactly that.

재료 (Ingredients):
(All-purpose flour) 4Cup
소금 (Salt) 1Tsp

Keep at room temperature to soften.)
(Vanilla) 2tsp
우유 (Milk) 250ml
드라이 이스트 (Dry Yeast) 4Tbsp (조금 많은것 같지만 괜찮습니다/It may seem like a lot, but that’s fine.)
(Sugar) 3Tbsp
(Pearl Sugar) 1Cup + 1/3Cup

First, pour 250ml (1 cup) of milk into a glass measuring cup and microwave it for 50 seconds.

Add 4 Tbsp of dry yeast and 3 Tbsp of sugar to the warm milk and mix well. Cover with plastic wrap and let it sit for 5 minutes to activate.

This is the KitchenAid Stand Mixer I used for the dough. Since it is a tilt-head model, the head wobbles slightly while kneading.

I started the mixer on speed 2, and once the dough came together, I lowered it to speed 1. After adding the butter, I let it mix for a total of about 15 minutes.

Add 4 cups of flour, 1 tsp of salt, 2 tsp of vanilla, and 4 eggs to the mixer, then pour in the activated milk mixture. I didn’t have any vanilla on hand so I had to skip it, but this is the step where you should add it.

When first mixing the dry ingredients, I set the mixer to speed 2. Once the dough comes together and it’s time to add the butter, lowering the speed to 1 is my own personal method.

Take out 300g of butter in advance to soften at room temperature without letting it melt, and add it to the mixer in three separate additions. If you use completely melted butter, the dough will become runny, and the liquid butter will separate, taking a long time to fully incorporate.

Once the dough has somewhat come together in the mixer, add the butter in three separate additions. Make sure each batch of butter is fully incorporated into the dough before adding the next.

After adding the butter, continue mixing until the dough is smooth and well combined. Once it is fully incorporated, remove the bowl from the mixer, cover it with plastic wrap, and place it in the refrigerator to cold ferment for 12 hours.

During this resting period, the gluten structure in the dough gently relaxes, resulting in a soft and chewy texture when baked, rather than being dry. Additionally, the dough, which was sticky and heavy from the 300g of butter, firms up in the cold fridge. This makes it much easier to fold in the pearl sugar and divide the dough into individual portions later.

Make sure to take the dough out of the refrigerator one hour before making the waffles.

Now for the pearl sugar. Out of all the ones I’ve tried, this was the best product, as it gave me a texture closest to what I was looking for when the waffles were baked.

As the butter in the cold dough melts, it becomes soft and might look a bit sticky, but that is perfectly fine. I like to put the dough back into the freezer for 1 to 2 minutes to firm it up slightly before baking the waffles. This prevents the dough from sticking to your hands and makes it much easier to handle.

Instead of baking them all at once, you can just bake what you plan to eat. You can freeze the remaining dough and take it out in advance to bake whenever you crave one. Of course, it is also perfectly fine to bake all of them ahead of time and store the finished waffles.

When reheating stored waffles, I highly recommend using an air fryer. A microwave tends to make the crispy caramelized parts soggy, but an air fryer perfectly maintains that crispy texture. Just pop a frozen waffle into the air fryer for about 5 minutes, let it cool for a brief moment, and it will taste just as good as when it was first baked.

Portion the dough into 100g pieces and place them in the freezer for 1 to 2 minutes. The dough, which had softened from the melting butter, will firm up again, making it much easier to handle. Although I couldn’t fit them all in the picture, dividing the entire batch yielded a total of 14 and a half portions.

The chilled dough is much easier to handle. I set aside the amount of dough I wanted to bake, wrapped the rest, and put it back in the freezer.

Now it is time to bake the waffles. I tried using a mini waffle maker, which is very popular and convenient these days, but the temperature was too low, so it took a long time to bake.

As a result, the pearl sugar completely melted away, losing its signature crunch, and the lack of proper caramelization was a bit disappointing. To achieve the authentic texture of a Belgian waffle, I highly recommend using a waffle maker that can reach a high temperature.

First, set your waffle maker to a medium-high heat and let it preheat thoroughly for about 5 minutes. The temperature is just right if you hear a sizzling sound as soon as you place the dough on it.

I baked them on heat level 4 for 2 minutes and 30 seconds. Personally, I don’t prefer overly large waffles, so I baked them small, but if you want to bake them large enough to fit the waffle maker’s mold, you can adjust the amount of dough to your liking. However, if you bake them in smaller sizes, the sugar that flows outward during the caramelization process can burn. Especially when baking several in a row, there is a slight hassle of having to wipe the pan in between.

Place one portion of the divided dough onto the waffle pan. Close the lid and let it bake fully for 2 minutes and 30 seconds without opening the lid in the middle.

I baked the second waffle. I placed the dough and baked it in the same way, but starting from the second one, the color came out darker due to the caramelized sugar.

You can bake as many as you would like in this manner. If you bake the entire batch of dough, it will yield about 13 to 14 waffles of this size. I only baked the amount I planned to eat. Once baked, the waffles must be placed on a cooling rack. If you place them directly on a solid surface like a regular plate, the heat and moisture from the waffles will quickly make them soggy, and the pearl sugar might melt.

The true charm of a Belgian waffle lies in the crispiness of its caramelized exterior, the soft interior when you take a bite, and the crunchy texture of the pearl sugar. You might think it would be incredibly sweet because you are biting directly into large sugar crystals, but the fact that it is not as sweet as you would expect is another unique appeal of this waffle.

I didn’t want to leave this food and memory, which unexpectedly took on a special meaning, as just a passing thought of the past. I am no longer sick like I was then, but by baking them myself, I want to share with someone the gratitude and warm taste I felt that day.

I remember the sweetness and the warm care of my family that a small piece of waffle brought me when strong medication left my mouth bitter and unable to taste a thing. I hope that through these waffles I bake, this tender, comforting sentiment can be fully passed on to someone else.

Epilogue…

Some time later, I let the frozen waffle dough thaw in the refrigerator for a day.

I left it at room temperature for about 30 minutes before baking. During that time, the sugar seemed to have melted slightly, and I could see the pearl sugar crystals inside.

That might be why the sugar caramelized immediately when baking, making the color a bit darker. But other than that, it baked just as well as the first time.

One slight disappointment is that the sugar melts a bit while the dough is frozen and thawed. It’s similar to how the sugar melts slightly when you reheat fully baked, frozen waffles in an air fryer.

If this bothers you, just press some extra pearl sugar into the thawed dough before baking. It makes up for it perfectly and is incredibly delicious!

As an additional note, I reduced the baking time by 10 seconds to 2 minutes and 20 seconds because the melted sugar seemed to make it brown faster. Aside from the darker color, it tastes just like the fresh ones, so keep that in mind when you bake them.
