There was a time when I thought I could only cook if my refrigerator was fully stocked and everything was perfectly prepared. No matter where I lived, there were always supermarkets, convenience stores, and large grocery stores nearby, making it easy to get whatever I needed. Conversely, because I bought too much, a lot of ingredients ended up being thrown away unused.
It was a time when I didn’t really know what it meant to live frugally or how to utilize leftover ingredients. Since there was never a lack of anything, I would buy a ton of groceries, only to use fatigue as an excuse to order delivery or eat out. Looking back now, I reflect on whether I lacked gratitude for that abundance.
Even when making a single dish, I wonder why I always felt like so much was missing back then. If even one ingredient was left out, I felt the food would lose its taste and lack sincerity. Perhaps this is exactly what the phrase “poverty in the midst of plenty” means.
The abundance here is slightly different. Living abroad in a place where diverse ethnicities gather, there is an overflow of ingredients from all over the world. Nevertheless, as a Korean, I cannot give up Korean food, and there are times when it is difficult to find the exact ingredients I need. However, that does not mean poverty.
If it were the past me, this situation would have simply felt uncomfortable and lacking, but things are different now. Rather, I would say I have developed a sense of ease that comes from this very lack. If I am missing something, I simply find my own way and prepare the food with all my heart.
Just like today, I gathered some awkwardly leftover ingredients—not quite enough to make.
(Main Ingredients):
500g (Pork neck, 500g)
(Cabbage, 1/2 head)
(Medium carrot, 1ea)
(Medium zucchini, 1ea)
(Small cabbage, 1/2 head)
(Chinese Long Green Pepper 3ea)

First, julienne the carrots and zucchini to an even length. Cut the green peppers in half, remove the white pith and seeds, and julienne them as well. Slice the cabbage into appropriate sizes in the same way, being careful not to cut it too thinly. I did not use onions.
I omitted the onions to minimize the moisture that is released when stir-frying the vegetables later. If the filling holds too much moisture, it becomes messy and difficult to eat when wrapped in the crepe.

(Pork Marinade)
1 Tbsp (White wine, 1 Tbsp)
소금 1/4 tsp (Salt, 1/4 tsp)
후추 1/4 tsp (Black pepper, 1/4 tsp)
1 Tbsp (Potato starch, 1 Tbsp)
Slice 500g of pork neck into thin, wide pieces, and then cut them lengthwise into moderately thin strips.

Marinate the sliced meat with 1 Tbsp of white wine (sake, soju, or mirin can also be used), 1/4 tsp of salt, 1/4 tsp of black pepper, and 1 Tbsp of potato starch.
The reason for adding potato starch to the meat is to prevent it from releasing moisture during stir-frying. When wrapping it in a crepe with the vegetables, it becomes messy to eat if the juices leak out.

(Crepe Batter Ingredients)
1 Cup (All-purpose flour, 1 Cup)
1/4 Cup (Rice flour, 1/4 Cup)
소금 1/2 tsp (Salt, 1/2tsp)
1Cup + 1/2 Cup (Cold water, 1.5 Cups)
In a bowl, combine 1 cup of flour, 1/4 cup of rice flour, 1/2 tsp of salt, and 1.5 cups of cold water, and whisk until smooth.
I used dry rice flour. Adding rice flour to the regular flour gives the crepe elasticity both when pan-frying and eating, making it easier to hold and providing a pleasantly chewy texture.

Use a well-coated non-stick pan and cook over low heat to achieve the desired shape. Instead of pouring oil directly into the pan, apply it by wiping the surface with a paper towel. This prevents air bubbles from forming and helps the crepe cook smoothly.
I first poured 2 Tbsp of the batter into the pan and spread it out evenly. Once the crepe becomes translucent, flip it over to cook the other side. When it is done, remove it and place it on a wire rack, making sure the crepes do not overlap. If you place them on a regular plate, the residual heat can cause condensation on the bottom and make them soggy, so I highly recommend using a wire rack.

(Stir-fry Sauce)
간장 3 Tbsp (Soy sauce, 3Tbsp)
1 Tbsp (Sugar, 1 Tbsp)
1 Tbsp (Minced garlic, 1 Tbsp)
3 Tbsp (Korean chili flakes / Gochugaru, 3 Tbsp)
1 Tbsp (Korean chili paste / Gochujang, 1 Tbsp)
소금 1/2 tsp (Salt, 1/2tsp)
Before stir-frying the vegetables, cook the meat first. Add a little oil to a pan and stir-fry the pork over high heat. Since the meat is coated in starch, failing to add oil will cause the starch to stick to the pan, preventing the meat from cooking properly. The starch also helps minimize the moisture released during cooking. Set the cooked meat aside for now, and add it back in later to stir-fry together with the vegetables.

Next, add an appropriate amount of oil to a pan and heat it over medium heat. Once the oil is hot, add 1 Tbsp of minced garlic, 3 Tbsp of Korean chili flakes (gochugaru), 3 Tbsp of soy sauce, 1 Tbsp of sugar, 1/2 tsp of salt, and 1 Tbsp of Korean chili paste (gochujang), and stir-fry them in the oil. Stir-fry until the garlic, chili flakes, and chili paste blend together into a rich red color, making sure to stir continuously and keep a close eye on it so the edges do not burn.

At that point, turn up the heat, add the vegetables and meat, and stir-fry them well. If you stir-fry the vegetables over medium or low heat, they will slowly wilt and release moisture, making the dish soggy. Stir-frying over high heat is necessary to properly control the moisture and preserve the texture of the ingredients.

Once the vegetables have softened nicely and the sauce is well incorporated, transfer them to a plate.

Place a crepe on an individual plate, top it with an appropriate amount of the stir-fried meat and vegetables, roll it up to wrap the filling, and enjoy.

Actually, this is a Chinese-style dish we commonly call gochujapchae. It is typically accompanied by Chinese steamed flower buns and is often served for guests or on special occasions.
Even without the steamed buns, simply pairing it with these pan-fried crepes completes a highly elegant dish. Ingredients that seemed somewhat lacking came together with a single crepe to create a truly wonderful Chinese-style meal.
