
오늘은 언제나처럼 집에서 쉽고 편하게 끓여 먹을 수 있는 미소된장찌개 밀프랩을 만들어 보려고 합니다. 저희 집은 4인 가족이라 무엇이든 4인분 기준으로 넉넉히 준비해 두고 있어요.
Today, as always, I’m going to make a miso soup meal prep that you can easily and conveniently cook and eat at home. Since we are a family of four, we prepare everything generously based on four servings.
저희는 일반 한국 된장 대신 미소된장을 주로 사용하는데요. 캐나다에 살다 보니 향이 강한 음식은 아무래도 조금 신경이 쓰여, 상대적으로 향이 은은하고 부드러운 미소된장을 찾게 되더라고요.
We usually use miso paste instead of regular Korean soybean paste. Since we live in Canada, we tend to be a bit mindful of foods with strong aromas, so we prefer miso paste, which has a relatively mild and gentle scent.
아무리 해외에 살아도 한국 사람에게 된장찌개는 포기할 수 없는 영혼의 음식이죠. 하지만 이곳은 근처에 한국마트가 없어 육수 코인이나 한국 조미료를 구하기가 어렵습니다. 그래서 조미료 없이 맹물에 바로 끓여도 깊은 맛이 나는 저만의 레시피를 완성했습니다.
No matter how long you live abroad, soybean paste stew (doenjang-jjigae) is ultimate soul food that Koreans simply cannot give up. However, since there is no Korean grocery store nearby, it’s hard to find broth tablets or Korean seasonings here. So, I created my own recipe that tastes rich and deep cooked straight in plain water without any artificial seasonings.
입맛과 취향에 따라 물 양이나 부재료를 자유롭게 조절할 수 있는 레시피예요. 기본대로만 만드셔도 충분히 맛있고, 칼칼한 맛을 좋아하신다면 매운 고추를 살짝 첨가해 드셔도 좋습니다.
This recipe allows you to freely adjust the amount of water and additional ingredients to suit your taste and preference. It is delicious enough if you follow the basic recipe, but if you like a spicy flavor, adding a bit of hot chili pepper is also great.
Ingredients (재료)

미소된장 1kg (Miso Paste 1kg)
두부 1팩 (Tofu 1 pack)
버섯 1팩 (Mushrooms450g 1 pack)
냉동새우 20마리 (Frozen Shrimp 20 pcs)
양파 큰 것 2개 (Large Onions 2)
쥬키니 3개 (Zucchini 3)
무 2개 (Daikon Radish 2)
감자 3개 (Potatoes 3)
파 3단 (20~25뿌리) (Green Onions / Scallions 3 bunches – approx. 20–25 stalks)
소고기 손바닥 크기 1덩이 (Beef, palm-sized piece – any cut)
How to Make (만드는 순서)
먼저 재료 하나 하나 손질을 해서 용기에 담아서 냉동고에 보관 할것입니다.
First, I will prepare each ingredient one by one, place them in containers, and store them in the freezer.
1.미소 1kg 1봉이 사용되고 용기에 넣을때 1/2CUP 씩 들어가고 컨테이너 6개가 만들어 집니다. 저희는 짜게 먹지 않는 편이라 미소가 조금 남았습니다.
One 1kg bag of miso paste is used, with 1/2 cup placed into each container, making 6 containers in total. Since we tend to eat less salty, a little bit of miso was left over.

2.두부1팩은 옆으로 세번 칼로 자르고 위에서 아래로 4번을 자르고 전체 깍둑썰기해서 준비합니다. 너무 크면 공간이 없고 너무 작으면 다른 재료에 짖눌릴수 있습니다.
Slice one pack of tofu three times horizontally, then four times top to bottom, and dice it into cubes. If the pieces are too large, they won’t fit in the container, and if they are too small, they might get crushed by other ingredients.
3.버섯 1팩 450g 을 먼저 반을 자르고 다시 반으로 잘라 4등분 해줍니다. 버섯은 익으면 크기가 줄어드니까 조금 크게 잘라줍니다.
Cut 1 pack of mushrooms (450g) in half, then in half again to quarter them. Since mushrooms shrink when cooked, cut them into slightly larger pieces.



4.냉동새우 20마리를 찬물에 녹여준후 키친타월에 물기를 제거해 줍니다. 그런다음 차퍼에 돌려 곱게 다져 줍니다. 여기서 새우가 굉장히 중요합니다. 새우의 감칠맛이 맹물에 된장을 끓여도 따로 육수를 내거나 조미료를 넣지 않아도 깊은 맛을 냅니다.
Thaw 20 frozen shrimps in cold water and pat them dry with paper towels. Then, finely mince them using a food chopper. The shrimp is extremely important here. The umami from the shrimp gives the soup a rich, deep flavor, even when boiling miso in plain water without any separate broth or added seasonings.
5.양파 2개를 반으로 자르고 칼집을 크게 내어 먹기 좋게 썰어 줍니다. 양파의 단맛이 짤수 있는 된장의 맛을 부드럽게 잡아줍니다.
Cut 2 onions in half, make large cuts, and chop them into bite-sized pieces. The natural sweetness of the onions gently balances out the saltiness of the miso paste.



6.쥬키니 3개를 길이대로 반을가르고 다시 반을 잘라서 깍둑썰어줍니다. 쥬키니는 재료보다 더 많이 준비해서 넣어도 됩니다.
Cut 3 zucchinis in half lengthwise, then cut in half again, and dice them into cubes. You can prepare and add more zucchini than the amount listed if you like.


7.무는 중국산 다이콘 무를 사용했습니다. 한국무 처럼 생긴 것은 왠지 심지가 생긴것처럼 상태가 좋지 않아 코스트코에서 다이콘 무를 사서 잘라 주었습니다. 사진처럼 잘라주면 됩니다. 무가 가늘어서 2토막 내어서 얇게 썰어 줬는데 만약 사이즈가 크면 더 잘라주시면 됩니다.
I used Chinese daikon radish. The ones that look like Korean radish didn’t look very fresh and seemed like they might have fibrous cores, so I bought daikon radish from Costco and sliced it. You can slice it as shown in the picture. Since the daikon radish was thin, I quartered it and sliced it thinly, but if yours is larger, you can cut it into smaller pieces.



8.감자 3개도 반을 가르고 다시 반을갈라서 조금 두껍게 썰어줍니다. 된장을 끓일때 감자만 익으면 거의 다 끓여진것 처럼 감자가 마지막에 익는것 같습니다.
Cut 3 potatoes in half, then cut in half again, and slice them slightly thick. When boiling miso soup, it seems like the potatoes take the longest to cook, so once the potatoes are done, the soup is almost ready.


9.파는 거의 한단에10뿌리 정도 묶여있는 것 같습니다. 대신에 두께가 가늘합니다. 파는 3단 사용했고 굵기가 적당했습니다. 요즘은 코스트코에서 파를 팔아서 나름 저렴하게 살수있는 것 같습니다.
Green onions seem to be bundled with about 10 stalks per bunch. However, they are quite thin. I used 2.5~3 bunches of green onions, which was just the right amount. Lately, Costco sells green onions, so it seems you can buy them quite affordably.


10.소고기는 넣어도 되고 안 넣어도 됩니다. 야채만 있는 된장찌개 보다는 더 깊은맛이 나고 고기에서 나오는 기름이 더 맛이 있어서 우리는 꼭 소고기를 넣어 주는데 어떤 고기든 상관 없습니다, 안 넣어도 됩니다.
You can add beef, but it is optional. It gives a deeper flavor than a vegetable-only miso soup, and the fat rendered from the meat makes it even tastier, so we always add beef. Any cut of beef works, or you can skip it altogether.


모든 재료의 손질이 끝이 났습니다. 이제 용기에 담아 줄 것 인데 저는 도시락용 컨테이너를 사용 했습니다, 깊이도 있고 넓어서 좋은 것 같고 냉동된 밀프랩도 잘 분리되어 저는 이것을 사용합니다. 4인용이라 사이즈가 넉넉해서 좋은 것 같습니다.
All preparation is now complete. Next, we will pack the ingredients into containers. I used meal prep/bento containers—they are deep and spacious, which works great, and frozen meal preps separate easily from them. Since each is a generous size for 4 servings, they work very well.

*지금 부터가 중요합니다. 각 용기에 위의 재료들을 나눠 넣어줄때 *미소된장1/2Cup, 간장1TBSP,그리고 고추가루1TBSP* 를 같이 넣어 주어야 합니다. 간장이 들어가서 밑에 가라 앉아도 냉동되면 깔끔하게 떨어집니다. 고추가루는 많이 넣으면 텁텁한 맛이 날 수 있으니 1TBSP만 넣으시면 됩니다.
This part is crucial. When dividing and placing the above ingredients into each container, you must add 1/2 cup of miso paste, 1 TBSP of soy sauce, and 1 TBSP of chili powder. Even if the soy sauce settles at the bottom, once frozen, it pops out cleanly. Adding too much chili powder can make the flavor heavy and murky, so 1 TBSP is just right.


이렇게 담았습니다.순서가 있는 것은 아닙니다. 4인 가족 6팩을 만들었습니다.
I packed them like this. There is no specific order to follow. I made 6 packs for a family of four.
*미소된장 찌개 끓이기 : 먼저 냄비에 물 1L 를 넣어 줍니다. 그리고 냉동실에서 밀프랩 하나를 꺼내서 넣어줍니다. 처음에는 냄비에 다 들어가지 않지만 물이 끓으면 자연스럽게 풀어집니다. *이때 재료에 들어간 새우를 잘 풀어줘야 합니다*. 그렇지 않으면 한 덩어리로 뭉칠 수 있습니다. 재료들이 알맞게 익고 감자까지 익으면 그릇에 담아 드시면 됩니다. 사진에 끓이는 재료는 밀프랩 만든 후 끓여서 재료들이 얼지 않았습니다.
How to Cook Miso Soup:
First, pour 1L of water into a pot and add one meal prep container from the freezer. It might not fit completely into the pot at first, but as the water comes to a boil, it will naturally loosen up. At this point, make sure to gently break apart the minced shrimp; otherwise, it may clump together into a single mass. Once the ingredients are fully cooked and the potatoes are tender, ladle into bowls and enjoy. (Note: The ingredients shown in the picture were cooked right after making the meal prep, so they are not frozen.)
