오이지는 한국을 대표하는 반찬 중 하나 입니다. 어떻게 보면 서양의 오이피클과 비슷해 보이지만, 만드는 방식과 식감에서 큰 차이가 있죠. 오이지는 펄펄 끓인 진한 소금물을 부어 오이 속 수분을 쏙 빼내어 만드는데, 이 과정에서 겉은 단단해지고 특유의 오독오독한 식감이 완성됩니다. 씹을수록 매력적인 이 식감이 바로 오이지의 가장 큰 매력이 아닐까 싶어요.

Oi-jee (Traditional Korean Pickled Cucumbers) is one of Korea’s representative side dishes. While it may look similar to Western cucumber pickles at first glance, there is a distinct difference in both the preparation method and texture.

Oi-jee is made by pouring boiling-hot, concentrated salt water over cucumbers to draw out their internal moisture. Through this process, the skin becomes firm and achieves its signature crunchy texture. I believe this deeply satisfying crunch with every bite is truly the greatest appeal of oi-jee.

보통 한국에서는 단단한 조선오이(백오이)를 사용하지만, 이곳 캐나다에서는 구할 수 없어 늘 아쉬움이 남습니다. 오이지의 오독오독한 식감을 잊고 살기에는 그리운 맛이라 비록 조선오이는 아니지만 이곳에서 쉽게 구할 수 있는 미니오이를 사용해서 나름의 오이지를 만들어 먹으며 그 아쉬움을 달래곤 합니다.

In Korea, firm Joseon cucumbers (white cucumbers) are typically used, but since they aren’t available here in Canada, I always feel a bit of lingering disappointment. However, the signature crunchy texture of oi-jee is too nostalgic to live without, so I make my own version using readily available mini cucumbers to satisfy that longing, even if they aren’t traditional Joseon cucumbers.

Ingredients (재료)

절임용 (For Pickling)

코스트코 미니오이 (Costco Mini Cucumbers, 3 lb) : 2봉지 (2 bags)

굵은소금 (Coarse Sea Salt) : 1 L

물 (Water) : 2.5 L

오이지 무침 양념 (For Seasoning)

절인 오이 (Pickled Cucumbers) : 10개 (10 pcs)

고춧가루 (Chili Powder) : 1 TBSP

다진 마늘 (Minced Garlic) : 1 TBSP

통깨 (Sesame Seeds) : 1 TBSP

참기름 (Sesame Oil) : 2.5 TBSP (또는 2 ½ TBSP)

다진 파 (Chopped Green Onions) : 2 TBSP

How to Make (만드는 순서)

먼저 코스트코에서 미니오이를 고를때는 짧고 통통한것을 고르기보다 조금 얇으면서 긴 오이를 고르는것이 좋습니다. 통통한 오이는 안의 씨 부분이 넓어서 나중에 오이지를 담가 썰어보면 구멍이 생길 수 있습니다.

First, when choosing mini cucumbers at Costco, it is better to pick ones that are slightly thin and long rather than short and plump. Plump cucumbers have a wider seeds area inside, which can create hollow centers when sliced after pickling.

1.미니오이 3LB 2봉의 오이를 먼저 절임을할 통에 가지런히 담아줍니다.

오이를 씻어도 되지만 그렇게 되면 오이 표면에 묻은 물로 인해 붓는 뜨거운 소금물의 온도가 내려 갈 수 있으니 씻지않고 담는것을 추천 합니다.

  1. Place two 3 lb bags of mini cucumbers side by side in the pickling container.

While you can wash the cucumbers first, it is recommended to put them in unwashed, as any remaining water on the surface can lower the temperature of the hot brine when poured over them.

2.냄비에 물2.5L 와 소금 1L를 부어서 소금이 잘 녹게끔 저어줍니다.

이때 소금이 잘 녹지 않을 수 있으니 녹일 수 있을 만큼 녹여서 끓여 줍니다. 소금의 농도는 짜다 못해 쓴맛이 강한 농도여야 합니다.

  1. Pour 2.5 L of water and 1 L of salt into a pot and stir well to help the salt dissolve.

Since the salt may not dissolve completely at room temperature, dissolve as much as you can before bringing it to a boil. The salinity of the brine should be extremely high—salty to the point of tasting intensely bitter.

3.물이 끓으면 바로 끄지 않고 좀더끓여서 끓는 온도를 높여줍니다.

When the water comes to a boil, do not turn off the heat immediately; let it boil a bit longer to raise the temperature further.

4.끓은 물을 아주 조심해서 식힘없이 바로 오이가 담긴 통에 부어줍니다.

Very carefully pour the boiling water directly over the cucumbers without letting it cool down.

5.오이위에 무거운 접시등을 이용해서 오이가 뜨지 않게 눌러주는것이 가장 중요한 포인트 입니다.

원래 오이지를 담글때는 망에 넣어 고정시켜서 눌러 주는 것이 좋은데 그만한 망을 구할 수 없어 면 주머니에 넣어 절여보니 가운데 부분 오이가 잘 절여지지 않았습니다. 망이 없어서 이 방법을 사용 합니다.

  1. The most important key point is to weigh down the cucumbers—using a heavy plate or similar object—so they remain fully submerged and do not float.

Traditionally, when making oi-jee, it is best to secure the cucumbers inside a mesh net before weighing them down. However, since I couldn’t find a net of the right size, I previously tried pickling them inside a cotton pouch, but the cucumbers in the center didn’t pickle evenly. That is why I use this method instead when a proper net isn’t available.

6.잘 눌러진 오이는 뚜껑을 닫아 보관해서 일주일 절여준 후 필요할때 꺼내서 만들어 먹으면 됩니다.

Close the lid and store the well-pressed cucumbers to pickle for a week, then take them out to prepare and enjoy whenever needed.

7. 3일이 지난 오이의 모습입니다.

오이 표면의 모습이 수분이 빠져서 주름이 졌습니다. 만들어 지는 과정을 보여주기 위해 중간에 열어보았지만 일주일 동안 뚜껑을 열지 않고 절이는 것이 좋습니다.

The surface of the cucumbers has wrinkled as the internal moisture was drawn out. Although I opened the lid midway to show you the process, it is best to keep it closed and leave them to pickle without opening for the full week.

8. 7일이 지난 후의 모습입니다.

색이 많이 노랗게 변했고 이전보다는 주름도 많이 생겼습니다. 미니오이로 소금물에 절이면 내 생각으로는 지금의 모습이 잘 절여진 것 같습니다. 조선오이(백오이)였다면 더 꼬들하고 단단 했을텐데 재료가 가진 한계인 것 같습니다. 잘린 모습입니다. 안에 씨앗부분도 넓지않아 구멍도 생기지 않았네요.

The color has turned quite yellow, and there are many more wrinkles than before. In my opinion, this seems to be fully pickled for mini cucumbers in brine. If they were Joseon cucumbers (white cucumbers), they would have been firmer and crunchier, but I think this is just a limitation of the ingredient itself. Here is how they look sliced—the seed area inside isn’t wide, so no hollow centers were formed.

9. 통에 담아 줬습니다.

절여진 오이는 그냥 담근통에 두고 먹어도 되지만 먹을만큼 꺼내놓고 집에 있는 통들을 사용해서 담아 보관하시면 됩니다.저는 통에 담아서 냉장고에 넣어 꺼내 씁니다. 밖에 두어도 되는데 미니오이가 단단한 오이가 아니라 소금물에 절여졌어도 냉장고에 보관하면 오래 두고 먹을 수 있었습니다.

  1. I transferred them into containers.

You can leave the pickled cucumbers in the original container, but you can also take out as much as you need and store them in containers you have at home. I transfer them into storage containers and keep them in the refrigerator, taking them out as needed. While they can be kept at room temperature, mini cucumbers are not as firm as traditional cucumbers, so even though they are pickled in brine, keeping them in the fridge allows them to last much longer.

10. 따로 빼 놓은 오이지 10개를 썰어줍니다.

이때 써는 두께가 중요한데 너무 얇게 썰면 짠 물을 빼기 위해 물에 담그면 싱거워 질 수 있으니 사진처럼 얇은것에서 조금 더 한 사이즈로 썰어줍니다.

(약 2-3mm)정도면 될것 같습니다. 굵게 썰게 되면 짠물이 빠지는 시간도 길어지고 나중에 식감이 피클먹는것 같이 오독한 식감이 덜 합니다.

Slice them to a medium-thin thickness (about 2-3mm) as shown in the photo. On the other hand, if you slice them too thick, it takes longer to draw out the salt, and the resulting texture will be less crunchy, feeling more like eating ordinary pickles.

11. 썰어진 오이를 볼에담아 물을 부어서 베어있는 짠기를 빼줍니다.

먼저 첫물은 헹궈서 버려주고 다시 물을 받아서 오이를 물에 30분 담가 줍니다. 이때 중간 중간 체크를 하는데 썰린 크기에 따라 짠물이 빠지는 것이 달라질수 있으니 가장 굵게 잘린것을 먹어봐서 먹기힘든 짠맛이면 30분 시간보다 조금 더 담그고, 먹을 수 있는 짠맛이면 시간에 맞춰서 건져내면 됩니다. 오이지는 무칠 때 따로 간을 하지 않기 때문에 약간의 짠맛이 있어야 합니다. 만약에 너무 싱겁게 되었다면 간을 할때 소금간만 하면 짠맛이 강해지니 약간의 간장도 같이 넣어서 간을 맞추면 됩니다.

  1. Place the sliced cucumbers in a bowl and submerge them in water to draw out the excess saltiness.

First, rinse the cucumbers once and discard the water, then refill with fresh water and let them soak for 30 minutes. Check on them occasionally, as the rate at which salt is removed varies depending on the thickness of the slices. Taste the thickest slice: if it is still unpleasantly salty, soak them a bit longer than 30 minutes; if it has a pleasant, mild saltiness, remove them according to the timer. Since no additional salt is added when seasoning oi-jee later, a slight hint of saltiness should remain. If they end up becoming too bland, adding only salt when seasoning can make the saltiness too sharp, so add a small amount of soy sauce as well to adjust the flavor.

12. 짠 맛이 빠진 오이는 잘 짜야합니다.

저는 반드시 도구를 사용하길 추천드립니다. 오이에 들어있는 물기를 얼마나 많이 짜낼 수 있느냐에 오이지의 오독오독한 맛이 결정됩니다. 짤순이를 사용해서 잘 짜야 합니다.

  1. The desalted cucumbers must be squeezed thoroughly.

I highly recommend using a tool for this process. How much moisture you can squeeze out of the cucumbers determines the signature crunchiness of oi-jee. It is essential to squeeze them well using a food press or squeezer.

제가 쓰는 제품은 플루딕(FLUIDIC) 수동 압착식 짤순이(야채 탈수기/유청 분리기)입니다.(내돈내산 입니다) 손바닥 힘으로 상단 레버·스프링을 돌려 압착하는 방식입니다, 오이지·나물의 수분을 잘 빼주는 것 같고 그릭요거트 유청 분리용으로도 사용하고 있습니다. 무엇보다 전기가 필요 없고, 투명 용기라 깨끗하고 야채물이 배이지 않고 물방울 모양 수위창이 있어 짜인 물의 양을 한눈에 확인할수있고 세척과 보관이 편리합니다. *짤순이 사용해서 20분 짰습니다. *

The product I use is the FLUIDIC Manual Press Food Squeezer (vegetable dehydrator / whey separator), which I purchased with my own money. It works by manually turning the top lever and spring mechanism using palm pressure to compress the contents. It effectively squeezes out moisture from pickled cucumbers and seasoned vegetables, and I also use it to strain whey for Greek yogurt. Best of all, it requires no electricity, features a clean transparent container that doesn’t stain from vegetable juices, and includes a drop-shaped water level window that allows you to check the amount of extracted liquid at a glance. It is also very easy to clean and store. I squeezed the cucumbers for 20 minutes using this squeezer.

13. 잘 짜진 오이를 볼에 담아서, 고추가루1TBSP, 다진마늘1TBSP, 통깨1TBSP, 참기름2.5TBSP 넣어서 조물조물 약간 힘을 주면서 무쳐줍니다. 오이와 양념이 잘 버무려 졌을 때 다진파 2TBSP 를 넣어 살살 버무려 줍니다. 파를 양념들과 같이 버무리면 파가 짖눌리면서 오이의 맛이 깔끔하지가 않습니다.

Place the well-squeezed cucumbers in a bowl, add 1 TBSP of chili powder, 1 TBSP of minced garlic, 1 TBSP of sesame seeds, and 2.5 TBSP of sesame oil, then mix and massage gently with a bit of pressure. Once the cucumbers and seasonings are well blended, add 2 TBSP of chopped green onions and mix lightly. If you mix the green onions together with the initial seasonings, they can get crushed and bruised, which spoils the clean flavor of the dish.

14,이렇게 오독오독하게 먹음직 스럽게 만들어 졌습니다.

한국의 조선오이 (백오이)는 여름 오이라 겨울에는 한국마트에서도 볼수없고 가격도 비싸서 오이지를 담을수가 없었습니다. 반면에 미니오이는 조선오이 만큼의 식감은 나지 않지만 조선오이 못지않게 오독한 식감이 좋고 제일 좋은 것은 어느 계절 상관없이 코스트코에서 살 수 있으니 가격에서나 맛에서나 정말 좋은 것 같습니다.

Korean Joseon cucumbers (white cucumbers) are summer produce, making them hard to find even at Korean supermarkets during the winter, and their high price makes pickling oi-jee difficult. On the other hand, while mini cucumbers may not match the exact texture of Joseon cucumbers, they offer a delightfully crunchy bite that is nearly as good. Best of all, they can be purchased at Costco year-round regardless of the season, making them a fantastic alternative in terms of both affordability and taste.

과정이 길어보이지만 오이를 절이는 한가지 행동이 많은 시간 우리의 입안에서 오독오독 거리면서 즐거움을 주는 것 같습니다.
