이탈리안 마켓에서 사 온 페투치네(Fettuccine) 면으로 파스타를 해 먹기로 했다. 늘 자주 해 먹게 되는 메뉴라 편하게 시판용 토마토 페스토나 생크림을 활용해 파스타를 자주 만들어 먹곤 했다. 물론 저마다의 매력이 있지만, 우리 가족의 여름에는 그것보다 바질 페스토를 이용한 파스타를 더 자주 찾게 된다.
We decided to make pasta using fettuccine bought from an Italian market. Since it’s a dish we prepare quite often, I usually relied on store-bought tomato pesto or heavy cream to make quick cream pasta. While both have their own distinct charm, during the summer, our family naturally turns to pasta made with fresh basil pesto.
오늘도 바질 파스타를 먹자고 해서 급하게 페스토를 만들었다. 페투치네 면 500g, 4인 가족 기준의 양으로 만들었는데 조금 남았다. 냉장고에 보관해 두었다가 소스로 활용하면 좋을 것 같다.
Today, my family asked for basil pasta again, so I whipped up a batch of pesto in a hurry. I made enough for a family of four using 500g of fettuccine, and a little bit was left over. Storing it in the refrigerator to use as a sauce later seems like a great idea.

Ingredients (재료)
바질 잎 50g (Fresh Basil Leaves 50g)
파르미지아노 치즈 100g (Parmigiano-Reggiano Cheese 100g)
잣 30g (Pine Nuts 30g)
올리브 오일 2/3컵 + 3큰술 (Olive Oil 2/3 cup + 3 tbsp for topping)(1/3 cup x 2 + 3 tbsp for sealing)
소금 1/2작은술 (Salt 1/2 tsp)
How to Make (만드는 순서)
바질 세척 및 물기 제거 싱싱한 생바질 잎 50g을 물에 담가 씻어줍니다. 이때 잎이 짓눌리지 않도록 조심스럽게 흔들어 씻은 후, 야채 탈수기를 이용해 물기를 완벽하게 털어냅니다.
Washing & Drying Basil
Soak and wash 50g of fresh basil leaves in water. Gently swish them around so the leaves don’t get bruised, then use a salad spinner to completely shake off the excess water.

재료 준비 (치즈 & 잣) 파르미지아노 치즈 100g을 준비합니다. 잣은 작은 그릇에 담아 팬에 살짝 볶거나 전자레인지에 30초 정도 돌려 습기를 제거해 줍니다. 이렇게 열을 가하면 잣 내부의 천연 오일 성분이 활성화되어 고소한 향과 맛이 훨씬 깊어집니다. 또한 수분이 제거된 잣을 사용하면 페스토가 묽어지는 것을 막아주고 올리브오일 및 다른 재료들과도 훨씬 잘 어우러집니다.
Preparing Ingredients (Cheese & Pine Nuts)
Prepare 100g of Parmigiano-Reggiano cheese. Place the pine nuts in a small bowl and toast them lightly in a pan or microwave them for about 30 seconds to remove moisture. Heating them this way activates the natural oils inside the pine nuts, making their nutty flavor and aroma much deeper. Also, using moisture-free pine nuts prevents the pesto from becoming watery and helps them blend much better with the olive oil and other ingredients.

재료 분쇄하기
바질 잎은 칼날로 너무 강하게 갈면 향이 날아가고 갈변 현상이 생길 수 있습니다. 저는 닌자 차퍼(내돈내산)를 이용해 갈아주었습니다. 재료를 한 번에 넣고 갈 수 있어 편리하고, 일반 믹서기와 달리 속도를 조절하며 끊어가듯 분쇄할 수 있어 묽어지지 않습니다. 치즈와 잣의 입자가 알맞게 남아 씹히는 식감이 참 좋습니다.
Grinding Ingredients
If you blend basil leaves too aggressively with a sharp blade, the aroma can fade and oxidation (browning) may occur. I used a Ninja Chopper (purchased with my own money) to blend everything. It is convenient because you can blend all the ingredients at once, and unlike regular blenders, you can control the speed and pulse it in short bursts to prevent the pesto from becoming watery. I really love the texture, as the bits of cheese and pine nuts remain coarse enough to offer a pleasant crunch.

오일과 소금 간하기 차퍼로 갈아줄 때 올리브오일 1/3컵을 두 번 나누어 넣어주고, 소금 1/2작은술(tsp)을 꼭 넣어줍니다. 치즈가 들어가서 어느 정도 간이 될 것 같지만, 소금을 약간 넣어주어야 전체적인 맛이 깔끔하게 잡힙니다.
Seasoning with Oil & Salt
When blending with the chopper, pour in 1/3 cup of olive oil in two separate parts and make sure to add 1/2 tsp of salt. Although the cheese adds some salinity, adding a pinch of salt helps round out and balance the overall flavor cleanly.

용기 담기 어느 정도 입자가 살아있게 갈아지면 열탕 소독한 유리병에 담아줍니다. 만약 소독을 못 했더라도 마지막에 올리브오일을 덮어줄 거라 괜찮습니다. (저는 바로 파스타를 만들 예정이라 전량 다 사용할 것 같네요.)
Jarring & Storing
Once blended to a nice, coarse texture, transfer the pesto into a sterilized glass jar. Even if you couldn’t sterilize the jar, it’s fine as long as you seal the top with olive oil. (Since I’m making pasta right away, I will probably use it all up!)

오일 덮개 만들기 앞서 언급한 것처럼 완성된 바질 페스토 위에 올리브오일 3큰술(Tbsp)을 살짝 부어 공기 접촉을 차단해 줍니다.
Making an Oil Seal
As mentioned earlier, gently pour 3 tablespoons (tbsp) of olive oil over the finished basil pesto to seal it and prevent contact with air.

보관 및 응용 냉장 보관하여 두고 먹거나, 오래 보관할 경우 냉동 보관을 하면 됩니다. 양을 두 배로 만들고 싶다면 위의 모든 재료 분량을 두 배로 늘려주세요.
Storage & Serving Suggestions
Store it in the refrigerator for short-term use, or freeze it if you want to keep it longer. If you’d like to double the yield, simply double all the ingredient amounts listed above.

에필로그 (Epilogue)
짧은 시간에 너무나 쉽게 페스토를 완성했습니다.
한 가지 덧붙이자면, 취향에 따라 생마늘을 넣어도 되지만 저희 가족은 생마늘 향을 좋아하지 않아 생략했습니다. 구운 마늘을 넣는 방법도 있지만, 페스토의 농도가 질척해질 수 있어서 넣지 않았습니다.

I made this pesto so quickly and easily.
As a side note, you can add fresh garlic if you like, but my family isn’t fond of the raw garlic aroma, so I left it out. Another option is using roasted garlic, but I chose to skip it as well because it can make the pesto’s texture a bit too mushy.

Basil pesto can easily lose its fresh flavor and aroma when exposed to direct heat. When making pasta, make sure to turn off the heat and toss the pesto using only the residual warmth of the cooked pasta. This preserves both its vibrant taste and rich fragrance perfectly.
어느덧 가드닝을 마무리할 계절이 되었습니다. 그동안 정원에서 신선한 바질 잎을 수확해 참 쉽게 활용해 왔는데, 이제는 마켓에서 파는 화분 바질을 이용해야 할 것 같습니다. 그래도 쉽게 구할 수 있으니 다행이라는 생각이 듭니다.
Before I knew it, it’s time to wrap up the gardening season. I’ve enjoyed harvesting fresh basil leaves from my garden and using them so easily, but now I think I’ll have to use potted basil bought from the market. Still, I feel fortunate that it’s easy to get.
만드는 방법이 너무 간단해서 레시피라고 부르기조차 부끄럽지만, 이 작은 조리법만 알아둔다면 누구나 집에서 신선한 향의 바질 페스토를 즐기실 수 있습니다.
The method is so simple that I’m almost embarrassed to call it a recipe, but as long as you know this simple method, anyone can enjoy fresh, aromatic basil pesto at home.
모두가 아는 방법이지만 단지 조금 귀찮고 번거로워서 미루곤 합니다. 하지만 그리 오래 걸리지 않는 이 짧은 과정이 선사하는 바질 페스토는, 그 수고로움을 잊게 할 만큼 훌륭한 맛과 향의 가치를 전해줄 것입니다.
Everyone knows how to make it, but we often put it off simply because it feels a bit tedious and bothersome. However, this short process doesn’t take long at all, and the fresh basil pesto it yields delivers a depth of flavor and aroma well worth every small effort.
