I had some leftover chives in the fridge from making cucumber kimchi a few days ago, a single carrot that looked like it would start sprouting roots any day now, a few perilla leaves picked from a flowerpot, and pickled radish—which, as the joke goes, any Korean who loves gimbap is bound to have sitting in their fridge. On top of that, there were some fish cakes in the freezer, half a can of Spam left over from when my son cooked it a few days back, and three eggs. So, I decided to make gimbap.

The ingredients needed are simple, but making it is a bit of a hassle. Still, once made, it becomes a thoroughly satisfying meal in terms of both flavor and nutrition. So, I decided to make gimbap—a surprising meal made with simple ingredients, yet anything but simple to prepare.
First, thoroughly wash the chives, perilla leaves, and carrot, then peel the carrot clean with a peeler. Blanch the chives in boiling water, plunge them into cold water, squeeze out the excess moisture, and season with salt, sesame seeds, and sesame oil. Julienne the carrot, slice the fish cakes and pickled radish lengthwise, and cut the Spam into thick slices. In a greased pan, cook the eggs with a pinch of salt to make thin omelet strips. Stir-fry the carrot with a sprinkle of salt. Stir-fry the fish cakes with spicy chili oil sauce for a kicked-up flavor, and gently mix warm brown and black rice with salt, sesame seeds, and sesame oil until fluffy.
Place a seaweed sheet on a bamboo mat and spread the rice out evenly, leaving about 2 to 3 cm at the top edge uncovered. Place the perilla leaves in the middle of the rice, lay the egg strips on top, and neatly stack the pickled radish, Spam, carrot, chives, and fish cakes. Now comes the part where you need to roll it carefully. Starting from the edge closest to you, roll it up slowly while tucking in the ingredients, aligning the front edge with the far edge of the rice, and finishing naturally with the uncovered strip of seaweed. Place the rolled gimbap with the seam facing down so the moisture locks it tightly in place.
I made seven rolls of gimbap—plenty for my family of four. A touch of salt, sesame seeds, and sesame oil in each ingredient tied all the flavors together wonderfully.
These days, thanks to the influence of K-pop, gimbap is getting a lot of attention overseas as well. Even at local markets here, they sell frozen gimbap, and you can often see people who like or are curious about K-food buying it. It’s clear that gimbap has become much more widely known and loved. Now, going beyond just being curious, I hope many people give making gimbap a try at least once. On a day when you lack the ingredients to whip up an elaborate dinner, gimbap will bring unexpected delight to your meal and make you truly happy.
